Balsamic Watermelon and Shrimp Salad
3 cups seedless watermelon, cut in ½ inch cubes
2 medium jalapeno peppers: seeded, deveined and finely chopped or minced
1 cup cooked, chilled shrimp (adjust to your taste)
½ cup cilantro, chopped
⅓cup red onion, chopped
1- 2 avocados, cubed
¼ to ⅓ cup COCONUT BALSAMIC*
¼ tsp HIMALAYAN PINK SALT* (adjust to taste)
Diced red pepper for garnish (optional)
Place watermelon and avocado in a bowl deep enough to toss together. Add all
other ingredients in a separate bowl and mix well. Pour mixture over watermelon/avocado and gently toss. Chill in fridge until cold, toss again
garnish and serve. Enjoy!
