Savory Cheddar, Mashed Potato
2 cups cold or room temperature mashed potatoes (preferably unseasoned)
1 cup all purpose flour or ½ cup potato flour
1 cup sharp cheddar cheese, grated
2 large scallions, thinly sliced
⅓ cup GARLIC OLIVE OIL*
1 large egg, beaten
1 tsp baking powder
2 tsp HIMALAYAN PINK SALT* (less for pre-seasoned mashed potatoes)
fresh ground BLACK PEPPER* to taste
hot Sauce (optional)
fresh herbs for garnish (optional)
Heat waffle maker. Meanwhile, add all ingredients (except sour cream) and half the scallions to a large bowl and whisk thoroughly.
Grease the hot waffle iron well. Add ⅓ cup of mixture for each waffle. Cook until golden brown, about 5 minutes per waffle.

NOTES: Serve with sour cream, additional scallions, hot sauce and garnish with fresh herbs if desired. Serves 6-8. Substitute other flavored olive oils for delicious variations!
