Savory, healthy and so good!
12 plum tomatoes, halved lengthwise, cores and seeds removed (or favorite tomato variety)
4 Tbsp. Tuscan Herb Olive Oil* (also delicious with any of the other flavored olive oils)
1 1/2 Tbsp. Traditional Dark Balsamic* (also try with Lavender)
2 tsp. sugar (optional)
1 to 2 tsp. Italian Herbal Sea Salt* (adjust to taste)
1/2 tsp. freshly ground black pepper
Fresh Thyme, Rosemary, Basil or Oregano (optional)
Preheat the oven to 450 degrees F.
Arrange the tomatoes on a sheet pan, cut sides up, in a single layer. Blend the olive oil and balsamic vinegar together and drizzle over tomatoes. Sprinkle the sugar, salt and pepper and herbs over the tomatoes. Roast for 25 to 30 minutes, until the tomatoes are concentrated and beginning to caramelize. Serve warm or at room temperature.
