Peach and Garlic Marinated Chicken
1/4 cup Peach Balsamic* (try with Honey Ginger, Red Apple, Sicilian Lemon)
2 Tbsp. Honey
1 tsp. Soy Sauce
1/4 cup Garlic Olive Oil* (try with Harissa, Roasted Onion & Cilantro and more!)
6Large chicken thighs and/or drumsticks
Italian Herbal Sea Salt*
Ground Black Pepper
Combine all ingredients, pour over chicken (shrimp or pork work well, too) Allow to marinate for 4 - 12 hours. This marinade is great on the grill or as an oven-roasted dish. Roast the chicken in the oven at 350 degrees for 45 minutes. Season with salt and pepper to desired taste.
OPTIONAL: Drizzle with more marinade and/or sprinkle fresh herbs on top just before serving.
